1 pound ground beef
1 large onion
4 cups water
1 (16oz)can light red kidney beans (drained)
1 (15.5oz)can pinto beans (drained)
1 (15oz)can black beans (drained) 1 (15oz)can tomato sauce
1 (10.75oz)can tomato soup
1 (10 oz) can diced tomato and green chilies
1 (10 oz) can enchilada sauce
1 (1.25 oz) pack taco seasoning
1 tsp salt garnish with shredded cheese and sour cream 

Cook beef and onions until brown. Add all ingredients in large pot and bring to boil, reduce heat and simmer for 1 hour.



Morning Glory Muffins

2 cups flour
2 teaspoons soda
1/4 teaspoon salt
2 teaspoons cinnamon
1 cup sugar
2 cups grated carrots
1/2 cup raisins
1/2 cup chopped nuts
1/2 cup coconut
1 grated apple (with or without peel)
3 eggs
1/2 cup oil
2 teaspoons vanilla

TOSS dry ingredients, fruits and nuts together. In a separate bowl, stir wet ingredients; add to dry.
ADD 1/4 cup or more of any fruit juice if too dry. *
DIVIDE between muffin cups.
BAKE at 350 degrees, approximately 20 minutes.

*These muffins will last very well without drying out and freeze well too.
